Banana Oatmeal Cookie Recipe for Egg Allergy


I call these cookies outrageous because when I make a batch of these I have to hide them from myself.  These cookies are egg free and get their moisture from the bananas and olive oil.  If you don't like the taste of bananas you may substitute with 2 tablespoons of apple sauce.  Cooking cookies without eggs usually requires a moisture replacement and pureed fruit works wonderfully.

Ingredients:
1 Cup of Olive Oil
1/2 Cup of Brown Sugar
1/2 Cup of Sugar
1/2 Very Ripe Banana (Peeled)
1 Teaspoon of Vanilla Extract
1-2/3 Cups of All-Purpose Flour
3 Cups of Oatmeal (not instant, steel cut or Irish)
1 Teaspoon of Baking Soda
1 Teaspoon of Cinnamon
1 Pinch of Salt
1 Cup of Chocolate Chips

Directions: 
Preheat the Oven to 350F
With electric mixer, beat: olive oil, banana, brown sugar, white sugar and vanilla.
Slowly mix and add flour, oatmeal, cinamon, salt
Fold in chocolate chips.

Spoon on to cookie sheet
Bake approximately 10 minutes or until edges get golden brown but be careful not to burn.
Remove cookies from the cookie sheet onto a wire rack for cooling.
Serve cool.
