You'll never miss the eggs in this tasty oven fried fish recipe. This recipe works great with Black Fish, Cod Fish, Pollock and Haddock but will work well with other fish. These are the fish we catch in the North East so that's why they're specifically mentioned.
Needed:
2 cups of milk
1 pinch of salt
1 pinch of black pepper
approx. 1 pound of fillet fish without the skin
1 cup of breadcrumbs (not all breadcrumbs are egg free. make your own or read labels carefully)
1/2 stick of butter
Directions:
Soak your fillets in milk, salt and pepper for 1 -3 hours
Preheat your oven to 425F
grease your baking dish with olive oil - enough to liberally coat
Dip your fillet in breadcrumbs, be sure to coat both sides and lay flat in baking dish.
Cut thin slices of butter and cover the top of the fish.
Bake for approximately 15 minutes. The thickness of your fish will really determine the length of cooking time so be sure to check up on the fish frequently. It may actually be anywhere from 12 minutes to 20 minutes before done. I know when the fish is done is when it starts to split or flake. Do not over cook your fish or it will be very dry!
