Vanilla Sponge Cake for Egg Allergy



Needed:
2/3 Cups Milk
1/2 Teaspoon Apple Cider Vinegar
2/3 Cup Sugar
1/3 Cup vegetable oil or safflower oil
2 Teaspoons Vanilla Extract
1 1/2 Cups All Purpose Flour
3/4 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
Pinch of salt

Directions:
Preheat oven to 325F
Line cake pan with parchment paper.
Mix milk and vinegar in small bowl - let sit a minute
In large mixing bowl add all remaining ingredients, do not mix. Then pour over milk mixture and mix well until smooth.
Pour batter into pan and bake for approx. 25-30 minutes or until firm when pricked.

The cake in this picture was sprinkled with powdered sugar. Try macerated strawberries and icings as well. This recipe also makes great cupcakes! If you wish to make a double layer birthday cake, double the recipe.
