Spinach and Swiss Pinwheels (Appetizers)
I served this appetizer yesterday at a party and the entire crowd devoured these instantly and raved about how delicious they were. I was even requested to post the recipe on this blog so that they could have it.
This recipe is simple but looks beautiful when plated.
Makes approximately 2 dozen pinwheels.
Needed:
2 packages Frozen Chopped Spinach
1 Cup of Shredded Swiss Cheese
2 Puff Pastry Sheets (be sure its eggless!)
1/2 cup melted butter
Flour to dust the counter top
Cookie Sheet
Parchment Paper (optional)
Directions:
*Preheat your oven to 425F.
*Thaw out your spinach in the microwave. Rinse in collander under cold water and strain. Squeeze out any remaining water in the spinach - this is very important.
*Thaw out and un roll your puff pastry sheets. Lay your puff pastry sheets out on your lightly flour dusted kitchen counter top.
*Roll out flat with rolling pin (your rolling pin should also be lightly dusted in flour).
*Brush on the melted butter over exposed side of the pastry dough.
*Spread out spinach over each sheet and then sprinkle the shredded cheddar cheese over the spinach.
*Roll each sheet into a long log.
*Cut the log into 1/2 inch slices and place on parchment paper lined cookie sheet. These slices are your spirals and should be laying flat on the cookie sheet. If you do not have parchment paper, lightly greese your pan with butter.
*Brush remaining melted butter over the tops of the spinach pinwheels.
*Bake for approximately 10 minutes, be sure not to let them burn. The tops should be lightly browned and the dough should be thoroughly cooked.
*Serve hot!
